I recently polled my awesome friends on Instagram and said, HEY! What do you people want from me?! In a nice way, of course, because I love my Insta-friends (and all of my web friends). In a nutshell, they told me they’d like to see more dinners and desserts.

This is just perfect because these are my top two specialties. I’m on a mission to offer up more easy, yummy dinner options (and also more irresistible desserts), which brings me to this completely delicious and super easy Creamy Mushroom Chicken recipe. It is savory, easy and really really hard to stop eating.

HOW TO MAKE CREAMY MUSHROOM CHICKEN

The thing I love about this dish is how easy it is to make!The entire recipe from start to finish will be done in 30 quick minutes! It’s a dream!

STEP 1

Preheat oven to 350 degrees F. Spray a 9×13 baking dish with cooking spray and set aside. Heat olive oil in a skillet over medium-high heat. Add the chicken breasts, cover pan, and cook for 3 minutes on each side (salt and pepper each side).

STEP 2

Transfer the chicken to the prepared baking dish. Add the butter to the skillet (do not clean out remnants) and decrease heat to medium. Add the garlic, mushrooms, onion, parsley, salt and pepper and cook, stirring, until soft and fragrant, about 3 minutes. Add the flour and stir until mixture is thick. Add the broth and cream and bring to a boil over medium-high heat.

STEP 3

Remove pan from heat and pour the mixture over the chicken in the baking dish. Top with the Parmesan cheese and extra parsley. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through. Serve warm with rice, quinoa or pasta!

RECIPE NOTES

  • Replace flour with corn starch as a thickening agent if you are serving gluten-free guests.
  • Serve immediately after coming out of the oven with warm, cooked pasta, rice or even quinoa.
  • This is a great weeknight meal or dinner to serve when guests are over!
